Strawberry Summer Cake
I made this Long Distance Kitchen recipe for my writing group meeting a few weeks ago. I'm usually more of a fan than pie, but I loved this cake! It has a tender crumb with a delicate sweet flavor from the addition of barley flour. The edges are crisp and buttery and it's simply full of fruit. It was delicious with strawberries, but I think it would be interesting to try with peaches, blueberries, plums, or any combination of soft summer fruits. I even talked one of my ESL students into making it for a dinner party and he said that it was a hit. :)
