Thai Chicken and Noodle Salad
Jess assigned this recipe a few weeks back and I made it for my mom and Caleb for dinner after picking them both up at the San Jose airport. It was flavorful and refreshing and I wish I had some to eat right now. I cooked the chicken in my grill pan, which worked pretty well. The marinate didn't call for anything difficult to procure and it tasted great! I used all possible garnishes mentioned, since I love heaps of fresh herbs in my food.
