Soup Containing One Pound of Leafy Greens
This might be the most delicious healthy thing you ever eat.
It's based on an Herb, Chard, and Feta Soup recipe by Yotam Ottolenghi that appeared in Bon Appetit. I made this soup shortly after returning for Portland and before my CSA had started up again post-holidays, so I ended up getting all of my ingredients from Trader Joe's. They didn't have chard, but they did have a big bag of 1lb of cored and chopped "Southern Greens Blend" including mustard greens, turnip greens, collard greens, and spinach, and it worked perfectly.
This soup has so many greens that when you first mix them with the broth it seems like they'll never cook down enough to become a soup. But then they do, and you puree them with lemon juice and greek yogurt and lots of herbs and top each bowl with salty feta and more herbs and a dash of fruity olive oil and then you are happy. And meanwhile you are eating so many leafy greens!

Green soups have been sounding really good to me lately. I think my guy would be a fan of the dairy in this one.

Sure! Hope you enjoy it. I just ordered the Ottolenghi cookbook, so I plan to be trying out more of his recipes soon.
