Sweet Potato Spoonbread with Goat Cheese and Bacon Collards




I'd been meaning to make this spoonbread (another Heidi Swanson recipe) for a while, and I certainly had plenty of CSA sweet potatoes, but I never remembered early enough before dinner. You see, first, you need to bake the sweet potatoes in the oven for about 90 minutes, and then you mix them with eggs, flour, spices, etc. and bake again with a layer of whipped goat cheese in the middle. But finally I had the oven on for something else and managed to toss the sweet potatoes in. This was a delicious way to eat sweet potatoes and the leftovers made a great side dish for a couple of other meals.
